The Gaeta olive is a variety grown in the area enclosing the town of Gaeta and the small towns on the Aurunci and Lepini Mountains, among which the pre-Roman town of Cori.
The lightly bitter taste of this fruit combined with the typical sourness resulting from natural fermentation releases a lively smell which is peculiar to old must. The Gaeta olive is one of the most used and prized olives by the best international chefs.
The Oliva Bella of Cerignola has always been regarded to as native to the Cerignola plain, which is located in an area named Tavoliere delle Puglie, in Apulia region. This green big-sized long-ellispe shaped olive is very fleshy and has a full savoury taste. Highly appreciated for use in hors-d’oeuvres and snacks or to accompany wines and drinks in delicious appetizers.
