Black Gaeta Olives
The excellence in taste, savour and aroma makes OrtoCori “Gaeta Olives” appreciated and demanded worldwide. They enclose a unique indissoluble trinomial of produce, cultivation area features and processing method.
The Gaeta Olive cultivar is grown in the area enclosing the town of Gaeta and the small towns on the Aurunci and the Lepini Mountains, among which we find the pre-Roman town of Cori.
In particular the variety “Itrana” is harvested after reaching its full ripening stage and is next stored in brine for about 6 months. After such maturation period its flesh still mantains a light bitter taste which combined with the acidity typical to natural fermentation gets its final characteristic lively smell of old moust.
The Gaeta Olive is one of the most used and prized produces by the best international chefs.
